Chicken Penne with Lime (Printable Version)

01 - 12 oz penne pasta
02 - 1 1/2 cups broccoli florets
03 - 1 cup cherry tomatoes, halved
04 - 1 yellow squash, sliced
05 - 1 zucchini, sliced
06 - 1 red bell pepper, sliced
07 - 1/2 teaspoon paprika
08 - 1/2 teaspoon black pepper
09 - 1 teaspoon salt
10 - 1 teaspoon lime zest
11 - 1 lime, juiced (around 2 tablespoons)
12 - 3 cloves garlic, minced
13 - 2 tablespoons olive oil
14 - 2 boneless, skinless chicken breasts, cut into small chunks

15 - 2 tablespoons freshly chopped parsley
16 - 1/4 cup Parmesan cheese, grated

# Steps to Follow:

01 - Fill a big pot with water, add salt, and bring it to a boil. Cook the penne pasta by following the package directions. Toss the broccoli in the water during the last 2 minutes. Drain everything together and put aside.
02 - Grab a large bowl and combine the chicken pieces with lime juice, zest, paprika, pepper, and a bit of salt. Give it 10-15 minutes to soak in those flavors.
03 - Using a big skillet, heat up a tablespoon of olive oil on medium-high. Toss in the chicken and cook until it's golden and done—this should take about 5-7 minutes. Take it out and keep it aside.
04 - With the same skillet, pour in the rest of the olive oil. Stir in the garlic, letting it cook for about 30 seconds. Next, add the bell pepper, zucchini, squash, and halved tomatoes. Cook it all for 5-7 minutes until it's soft.
05 - Put the chicken back into the skillet along with the vegetables. Add the cooked pasta and broccoli. Stir everything really well and cook for around 2-3 minutes to heat it all up.
06 - Sprinkle on some Parmesan cheese and parsley if you'd like. Serve while it's hot and dig in!
