Kielbasa Potato Soup (Printable Version)

01 - 1 tablespoon olive oil
02 - 300 g kielbasa sausage, cut into bite-size pieces
03 - 1 medium onion, diced
04 - 1 medium carrot, diced
05 - 2 celery ribs, diced
06 - 4 garlic cloves, finely chopped
07 - 1/2 teaspoon red chilli flakes
08 - 750 g potatoes, peeled and cubed
09 - 1.25 litres chicken stock
10 - 300 ml full-fat milk
11 - 100 g cheddar cheese, grated
12 - 30 g fresh parsley, roughly chopped
13 - Salt and pepper to taste

# Steps to Follow:

01 - Heat the olive oil in a large pot or Dutch oven and fry the kielbasa for 4-5 minutes over medium heat until slightly crispy. Remove the sausage with a slotted spoon and set it aside.
02 - Add the onion, carrot, and celery to the same oil in the pot and cook for 5 minutes until softened.
03 - Stir in the garlic and red chilli flakes and cook for another minute until fragrant.
04 - Add the potatoes and chicken stock to the pot and bring to a boil. Lower the heat and simmer for 10-12 minutes, covered with a lid, until the potatoes are fork-tender.
05 - Take a ladle of the soup and mix it with the milk in a measuring jug or bowl to temper it. Pour the mixture into the pot, then add the cooked kielbasa.
06 - Add the cheddar cheese and stir until fully melted.
07 - Simmer the soup for 2-3 more minutes until it thickens slightly. Stir in the parsley and season to taste. Serve with extra grated cheddar if desired.
