14 - 1 1/2 pounds ground beef (80% lean, high quality)

# Steps to Follow:

01 - In a tiny bowl, stir together mayonnaise, ketchup, Worcestershire, black pepper, garlic powder, and kosher salt. Keep it covered in the fridge until time to use.
02 - Warm your cast-iron skillet over medium heat and drizzle in the oil. Toss in the sliced onions and jalapeños, sprinkle with 1/4 teaspoon of salt and black pepper, and stir sometimes. Let them cook until the onions are a rich brown and the peppers soften, about 10-15 minutes. Move them to a bowl once done.
03 - Cut the ground beef into 8 equal parts, about 3 ounces each. Roll the portions into loose balls, being gentle with your hands so the meat stays tender. Put them on a tray lined with parchment paper and pop them in the fridge to chill for a bit.
04 - Wipe your skillet clean and heat it up on high until it's just starting to smoke. Place a few meat balls into the pan without cramming them in. Smash each ball flat with a strong spatula or a burger press. Sprinkle the tops with the leftover salt and pepper. Let the patties crisp up for about 2-3 minutes per side. In the final minute, lay a slice of cheese on each one and let it melt.
05 - Lay sauce on the inner sides of your buns. Set a cheesy patty on each bottom bun, then layer on the onions and jalapeños. Add extras if you like, top it off with the other half of the bun, and eat right away.

01 - If you want less heat, cut out the seeds and white parts in the jalapeño before slicing.
02 - To get the best crust on your patties, the skillet needs to be super hot before adding the meat.
