Hot Honey Tortellini Pasta Salad (Printable Version)

01 - 32 oz cooked tortellini
02 - 4 oz prosciutto
03 - 8 oz pearl mozzarella balls
04 - 15 oz can corn kernels
05 - 3 small peaches, diced into small chunks
06 - 2 cups cherry tomatoes, sliced
07 - 1/2 cup chopped basil

→ Dressing

08 - 1/2 cup extra virgin olive oil
09 - 1/3 cup hot honey
10 - 1 tbsp Dijon mustard
11 - 3 tbsp red wine vinegar
12 - 2 cloves garlic, minced
13 - 1 tsp salt
14 - 1/2 tsp black pepper

# Steps to Follow:

01 - Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place prosciutto in a flat layer and bake for 10-15 minutes or until crispy. Remove and set aside.
02 - In a large bowl, combine tortellini, mozzarella balls, corn, peaches, cherry tomatoes, and basil.
03 - Chop the crispy prosciutto into small pieces and add it to the tortellini mixture.
04 - In a glass measuring cup, combine olive oil, hot honey, Dijon mustard, red wine vinegar, minced garlic, salt, and black pepper. Whisk until well mixed.
05 - Pour the dressing over the tortellini mixture and toss until evenly coated. Serve at room temperature or chilled.
