In a large bowl, combine tortellini, mozzarella balls, corn, peaches, cherry tomatoes, and basil.

Chop the crispy prosciutto into small pieces and add it to the tortellini mixture.

In a glass measuring cup, combine olive oil, hot honey, Dijon mustard, red wine vinegar, minced garlic, salt, and black pepper. Whisk until well mixed.

Pour the dressing over the tortellini mixture and toss until evenly coated. Serve at room temperature or chilled.
