In a medium bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and black pepper until thoroughly combined.

Taste the marinade and adjust seasoning to preference. Place chicken breasts in a large resealable plastic bag or shallow dish, pour the marinade over to coat, then seal or cover and refrigerate for at least 30 minutes up to 4 hours.

Preheat oven to 400°F. In a small bowl, stir together crumbled feta cheese, olive oil, salt, and black pepper. Set aside.

Remove chicken from marinade, allowing excess to drip off and discard used marinade. Arrange chicken breasts in a baking dish and top evenly with the feta cheese mixture.

Place baking dish in oven and bake for 25 to 30 minutes, or until the internal temperature reaches 165°F and the feta is golden and bubbling. Optionally, broil for the last 2 to 3 minutes to deepen the color.

Allow chicken to rest for 5 minutes. Garnish with chopped parsley and serve warm, drizzled with pan juices if desired.
