Peel and slice peaches, then set aside.

Spread ricotta cheese over bread slices. On one side, top with sliced peaches and drizzle honey. On the other side, add cheddar cheese slices.

Spread butter on top of each slice of bread.

Using a panini press or skillet heated over medium-low heat, place the sandwiches and cook until cheese melts. If the bread browns too quickly, reduce heat to low.

If using optional ingredients, remove the top of the sandwich and add bacon, basil, or balsamic glaze. Replace the top and serve immediately while warm.
