Toss diced bacon into a skillet over medium heat and cook until it gets nice and crispy. Take it out and set aside, but keep about 1 tablespoon of the bacon fat in the pan.

Sprinkle your chicken breasts with salt and pepper. Then lightly coat each piece with flour.

Pour olive oil into the same skillet and add your chicken. Brown each side for 4-5 minutes until they're golden and cooked through. Take them out and keep them warm somewhere.

Toss minced garlic into the bacon fat left in the pan and cook for a minute. Mix in honey, soy sauce, apple cider vinegar, and Dijon mustard. Let it bubble away for 3-4 minutes until it gets thicker.

Put the chicken back in the skillet and pour sauce all over it. Let everything simmer together for 2-3 minutes so the chicken gets totally covered in sauce.

Mix the crispy bacon bits back into the pan. Serve chicken on plates, pour extra sauce on top, and scatter fresh parsley over everything.
