# What You’ll Need:

01 - 4 boneless, skinless chicken breasts
02 - 1 teaspoon kosher salt
03 - 1/4 teaspoon pepper
04 - 1/4 teaspoon onion powder
05 - 1/2 teaspoon Italian seasoning
06 - 1 teaspoon olive oil
07 - 1 small shallot, finely chopped
08 - 2 cloves garlic, crushed
09 - 1/4 cup chopped sun-dried tomatoes (not in oil)
10 - 1 cup low-sodium chicken broth
11 - 1/2 teaspoon chili crunch oil or a pinch of red pepper flakes (optional)
12 - 2 tablespoons cornstarch
13 - 2 tablespoons grated Parmesan cheese
14 - 1/2 cup blended cottage cheese (any fat content)
15 - 3 tablespoons chopped fresh basil

# Steps to Follow:

01 - Season chicken breasts with kosher salt and pepper.
02 - In a skillet, heat olive oil and sauté shallot and garlic for 2 minutes.
03 - Push sautéed ingredients to the side of the skillet and sear chicken for 2–3 minutes per side. Sprinkle with onion powder and Italian seasoning.
04 - Transfer chicken to a slow cooker. Add sun-dried tomatoes, chicken broth, and optional chili oil or red pepper flakes.
05 - Cook on LOW for 4–6 hours or until the internal temperature of the chicken reaches 165°F.
06 - 30 minutes before cooking is complete, stir in a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons water) to thicken the sauce.
07 - Turn off the heat and stir in Parmesan cheese and blended cottage cheese until smooth.
08 - Return chicken to the sauce, coat thoroughly, and serve garnished with fresh chopped basil.
