Hearty Cowboy Salad (Printable Version)

# What You’ll Need:

→ For The Salad

01 - 1 head romaine lettuce, chopped
02 - 1 can (15 oz) black beans, drained
03 - 1 can (15 oz) black eyed peas, drained
04 - 1 cup frozen corn, thawed and drained
05 - 2 cups cherry tomatoes, halved
06 - 1 cup shredded cheddar cheese
07 - 1 avocado, chopped
08 - 1 red bell pepper, chopped
09 - 1 jalapeño, seeded and minced
10 - 1/2 red onion, diced
11 - 1 handful fresh cilantro, chopped

→ For The Dressing

12 - 1 cup mayonnaise
13 - 1/2 cup smokey sweet BBQ sauce
14 - 2 tablespoons Dijon mustard
15 - 2 tablespoons Worcestershire sauce
16 - 2 tablespoons fresh lime juice

# Steps to Follow:

01 - In a medium bowl, whisk together the mayonnaise, BBQ sauce, Dijon mustard, Worcestershire sauce, and lime juice until well combined. Set aside.
02 - In a large serving bowl, toss together the chopped romaine lettuce, drained black beans, drained black eyed peas, corn, cherry tomatoes, cheddar cheese, avocado, red bell pepper, jalapeño, red onion, and cilantro.
03 - Drizzle the prepared dressing over the salad to taste and gently toss to coat. Serve immediately.
