Healthy Chicken Pasta Salad (Printable Version)

# What You’ll Need:

01 - 2 medium cooked chicken breasts, shredded or chopped
02 - 2 ripe avocados, pitted and diced
03 - 1 pound cooked rotini pasta, chilled
04 - 1/2 cup chopped red onion
05 - 1 cup cherry tomatoes, halved
06 - 1/2 cup freshly chopped basil
07 - Salt and fresh cracked pepper, to taste

→ Dressing

08 - 1/2 cup white wine vinegar
09 - 1 tablespoon Italian seasoning
10 - 3/4 cup extra virgin olive oil
11 - Salt and pepper, to taste

# Steps to Follow:

01 - Add the shredded chicken, pasta, onion, avocado, cherry tomatoes, and basil into a large bowl.
02 - In a jar, combine white wine vinegar, Italian seasoning, olive oil, salt, and pepper. Whisk or shake well to combine.
03 - Drizzle the salad with the dressing. Toss gently until all ingredients are evenly combined.
04 - Serve the pasta salad immediately, or refrigerate for later use.

# Additional Notes:

01 - To prevent avocado from browning, coat with lemon or lime juice.
02 - This salad can be prepared a day in advance by leaving out the avocado and tomato until serving time.
