Healthy Broccoli Salad (Print Version)

# Ingredients:

01 - 1 ½ pounds fresh broccoli, cut into bite-size pieces
02 - 1 cup fresh blueberries
03 - ¼ cup finely chopped red onion
04 - ½ cup dried cranberries
05 - ¼ cup sunflower seeds
06 - 1 large apple, chopped into bite-size pieces
07 - 1 tablespoon lemon juice

→ For the homemade dressing

08 - 1 cup plain Greek yogurt (full-fat or low-fat)
09 - ¼ cup honey
10 - 1 tablespoon lemon juice
11 - 2 teaspoons apple cider vinegar
12 - 1 tablespoon poppy seeds

# Instructions:

01 - Place broccoli, blueberries, red onion, cranberries, and sunflower seeds in a large bowl. In a small bowl, toss apple pieces with 1 tablespoon lemon juice and add to the large bowl.
02 - In a small bowl, whisk together Greek yogurt, honey, lemon juice, apple cider vinegar, and poppy seeds until smooth.
03 - Pour the dressing over the salad and toss gently to combine. Serve immediately or refrigerate until ready to serve. Best enjoyed within one day after tossing with the dressing.

# Notes:

01 - For a richer dressing, you can substitute 1 cup mayonnaise for the Greek yogurt and reduce honey to 3 tablespoons.
02 - Apple cider vinegar can replace lemon juice in the dressing if preferred.
