# What You’ll Need:

01 - 1.5 lbs boneless, skinless chicken breasts or chicken cutlets
02 - ½ cup whole wheat flour
03 - 3 large eggs
04 - 1.5 cups shredded mozzarella
05 - 1.5 cups marinara sauce

06 - 1 cup whole wheat bread crumbs, unseasoned
07 - ½ cup grated Parmesan cheese
08 - ¼ teaspoon black pepper
09 - 2 teaspoons dried basil
10 - 2 teaspoons dried parsley

# Steps to Follow:

01 - Butterfly and pound chicken breasts. Slice each chicken breast in half lengthwise, place between plastic wrap, and use a meat tenderizer to pound to approximately ¼ inch thickness to ensure even cooking.
02 - Preheat oven to 425°F and line a baking sheet with parchment paper.
03 - Set out three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with the bread crumb mixture (combine bread crumbs, Parmesan cheese, black pepper, dried basil, and dried parsley).
04 - Form an assembly line with the bowls. Coat each chicken cutlet in flour, then dip in whisked egg, and finally coat in the bread crumb mixture. Press gently to ensure the coating sticks, and repeat for all cutlets.
05 - Arrange the breaded cutlets on the prepared baking sheet and bake at 425°F for 15 minutes. Flip cutlets and bake for an additional 15 minutes.
06 - After baking for 30 minutes, top each cutlet with ¼ cup marinara sauce and ¼ cup shredded mozzarella cheese. Return to the oven and set to broil for 2 minutes until cheese is melted.
07 - Serve hot over pasta or salad as desired.
