Ground Beef Burrito Bowl (Printable Version)

# What You’ll Need:

01 - 1 tablespoon olive oil
02 - ½ medium onion, diced
03 - 2 teaspoons garlic, minced
04 - 1 pound ground beef
05 - 1 cup long grain rice, dry and uncooked
06 - 14.5 ounces canned tomatoes, diced or crushed with juice
07 - 1 tablespoon tomato paste
08 - 2 tablespoons taco seasoning
09 - 1 cup frozen corn
10 - 15 ounces canned black beans, drained
11 - 1 medium red bell pepper, chopped
12 - 2 cups low sodium chicken broth
13 - 1 medium lime
14 - 1 cup sharp cheddar cheese, shredded

# Steps to Follow:

01 - In a large 5-quart sauté pan, heat one tablespoon of olive oil over medium heat. Place the onion and garlic in the pan, cooking and stirring until the onions begin to brown.
02 - Add the ground beef to the pan and cook until browned. Drain the grease from the beef.
03 - Add the rice, tomatoes, tomato paste, taco seasoning, corn, black beans, bell pepper, and chicken broth to the pan. Stir well, bring to a boil, cover, and reduce the heat to a simmer. Cook for 18-20 minutes until most of the liquid is absorbed and the rice is tender.
04 - Squeeze the juice from one lime over the dish and stir. Add salt and pepper as needed.
05 - Sprinkle shredded cheddar cheese over the top of the dish. Cover and allow it to sit for 1-2 minutes until the cheese melts.
06 - Serve the dish in a bowl with your preferred garnishes and enjoy.

# Additional Notes:

01 - Fresh tomatoes can substitute for canned. Use about a pound of fresh tomatoes or 5-6 medium-sized ones with their juices. Cooking times for the rice may vary.
02 - If the rice is too wet and not tender, return the lid and cook longer. If the rice is tender but the dish remains liquid, cook uncovered at medium-high heat to reduce excess liquid.
