01 - 4 chicken breasts
02 - 1 teaspoon Italian seasoning
03 - 1/2 teaspoon garlic powder
04 - 1/2 teaspoon onion powder

06 - 4 slices fresh mozzarella
07 - 4 slices ripe tomato
08 - 2 tablespoons fresh basil, thinly sliced

→ Balsamic Reduction

09 - 120 ml balsamic vinegar
10 - 2 tablespoons light brown sugar

# Steps to Follow:

01 - Preheat grill to medium-high heat (approximately 200°C). Spray the grates with non-stick cooking spray to prevent sticking.
02 - Season chicken breasts evenly with Italian seasoning, garlic powder, and onion powder. Sprinkle with salt and pepper on both sides for complete flavor coverage.
03 - Place seasoned chicken breasts on the preheated grill and cook until they reach an internal temperature of about 70°C, just before being fully cooked.
04 - Top each chicken breast with a slice of mozzarella. Close the grill lid and continue cooking for 2-3 minutes until cheese melts and chicken reaches a safe internal temperature of 74°C.
05 - While chicken cooks, combine balsamic vinegar and brown sugar in a small saucepan over medium heat. Bring to a gentle simmer and cook for 10 minutes or until the sauce reduces by half and reaches a syrupy consistency. Keep warm until serving.
06 - Remove chicken from the grill and transfer to serving plates. Top each with a slice of tomato and sprinkle with fresh basil. Drizzle with warm balsamic reduction and serve immediately.
