02 - 2 bison sirloin steaks, 1-inch thick
03 - 1 lemon, juiced
04 - 1 teaspoon kosher salt
05 - 1 teaspoon coarse black pepper
06 - 2 tablespoons peppercorn steak rub

# Steps to Follow:

01 - Combine the lemon juice, salt, and black pepper in a small dish. Place the steaks in the marinade mixture, ensuring they are evenly coated. Cover and set aside to marinate for at least 30 minutes.
02 - Preheat the grill to 400°F (204°C) by adjusting the burners to high heat for 10 minutes.
03 - Remove the bison steaks from the marinade and pat them dry. Press the steaks into the peppercorn steak rub on a plate to coat thoroughly.
04 - Place the bison steaks on the hot grill and cook for 3-4 minutes. Flip the steaks, sprinkle additional peppercorn rub, and cook for another 3-4 minutes.
