Grilled Balsamic Vinaigrette Sandwich (Print-Friendly Version)

Mozzarella, peppers, and spinach on sourdough, grilled with balsamic vinaigrette for a warm, satisfying melt.

# Ingredients You’ll Need:

01 - 8 slices sourdough bread
02 - 1 cup fresh mozzarella cheese, sliced
03 - 1 cup roasted red bell peppers, sliced
04 - 1 cup fresh spinach leaves
05 - 1/2 cup balsamic vinaigrette
06 - 1/4 cup fresh basil leaves, chopped
07 - 1/2 teaspoon garlic powder
08 - Salt and pepper, to taste
09 - Olive oil, for grilling

# How to Make It:

01 - Preheat the grill or a non-stick skillet over medium heat. Slice the sourdough bread, fresh mozzarella, and roasted red bell peppers. Rinse and dry the fresh spinach and basil.
02 - In a bowl, combine balsamic vinaigrette, chopped basil, garlic powder, salt, and pepper. Mix until well combined to create a flavorful drizzle for the sandwiches.
03 - Lay 4 slices of sourdough bread on a clean surface. Layer with fresh mozzarella, roasted red bell peppers, and spinach. Drizzle the balsamic mixture over the fillings. Top with the remaining 4 slices of bread to complete the sandwiches.
04 - Brush the outside of each sandwich with olive oil. Place sandwiches on the preheated grill or skillet. Cook for 4-5 minutes on each side until the bread turns golden brown and the cheese melts.
05 - Remove the sandwiches from the heat and let them cool briefly. Slice each sandwich in half and serve with additional balsamic vinaigrette on the side, if desired.
