# What You’ll Need:

01 - 1 package taco seasoning mix
02 - 1 cup Monterey Jack cheese, shredded
03 - 1 1/2 cups sharp cheddar, shredded
04 - 6 large tortillas (flour)
05 - 1/4 cup water
06 - 1 can (16 oz) mashed refried beans
07 - 1 lb of beef, ground
08 - 1 can (10 oz) red sauce for enchiladas

→ Extra Toppings

09 - Sliced black olives
10 - Sour cream dollops
11 - Minced onions

# Steps to Follow:

01 - Preheat the oven to 375°F. Warm up a skillet on medium heat and cook the ground beef till it's browned completely. Get rid of excess grease.
02 - Add in the taco mix and water. Let it simmer for a few minutes till it thickens slightly. Stir in the refried beans and heat until everything is blended and hot.
03 - Fill each tortilla with a portion of the beef and bean filling. Roll each one tightly and lay them seam down inside a baking dish.
04 - Spread the enchilada sauce all over the rolled tortillas. Scatter Monterey Jack and cheddar cheese generously on top.
05 - Pop it uncovered into the oven and let it bake for 20–25 minutes, or until the top is bubbling and hot.
06 - Dish it out warm. Add some extra sauce and any extra toppings you like before enjoying.

01 - To prevent tearing, make sure to use soft and flexible tortillas.
02 - Crank up the heat by tossing in jalapeño chunks with the meat and beans mix.
