Toss mashed potatoes, grated Parmesan, cheddar, flour, one egg, onion bits (if you’re adding them), garlic powder, salt, and pepper into a large bowl. Stir it all together until you get a dough that sticks together.

Spread some flour on a clean surface. Take pieces of dough and roll them into logs that are about 1 inch thick and 3 inches long.

Crack the second egg into a bowl and beat it. Put the breadcrumbs into another bowl nearby.

Take each log and dip it in the beaten egg. Then roll it around in the breadcrumbs so it’s coated all over.

Pour about an inch of oil into a large pan and heat it up on medium.

Drop a few sticks into the hot pan at a time. Let them fry for 2–3 minutes per side, flipping them once they’re golden. Don’t pack too many in at once.

Lay the fried sticks on paper towels to drain the extra oil. Serve them while they’re warm.
