Golden Chicken Alfredo (Printable Version)

# What You’ll Need:

→ Chicken

01 - 4–6 chicken breasts, sliced thin
02 - 1½ teaspoons seasoning mix (Italian style)
03 - 1½ teaspoons garlic powder
04 - 1½ teaspoons onion powder
05 - ¼ cup Parmesan, grated
06 - 2 beaten eggs
07 - 2 cups crispy panko crumbs
08 - ½ cup plain flour
09 - Salt and ground pepper, adjust to taste
10 - Oil for frying (use vegetable)
11 - Dash of black pepper, freshly ground, for taste

→ Alfredo Sauce

12 - 12 ounces of fettuccine noodles
13 - 1 cup Parmesan cheese, grated fresh
14 - Fresh parsley, chopped for topping
15 - A pinch of salt, as needed
16 - 4 tablespoons of unsalted butter
17 - 1 cup cream (use heavy)
18 - A couple cloves of garlic, minced
19 - Fresh black pepper, sprinkle as desired

# Steps to Follow:

01 - Dust the chicken with salt plus a bit of pepper. Get three shallow bowls ready: one for flour, another for the eggs, and a final one mixing the breadcrumbs, Parmesan, and seasonings. Coat each piece of chicken in flour first, then egg, and finally the spiced breadcrumb mix. Tap gently for it to stick well.
02 - Heat oil in a wide pan over medium-high until it’s good and hot. Cook the coated chicken pieces for roughly 3 to 4 minutes per side. They should turn golden and cook completely. Lay the fried chicken on paper towels to soak up extra oil. Keep those warm.
03 - Bring a big pot of salted water to a boil. Cook the fettuccine until it’s firm to the bite (check the box for timing). Save ½ cup of the pasta water before draining the rest.
04 - Melt the butter in a big pan over medium heat. Toss in garlic and stir for about a minute until you can smell it. Slowly add heavy cream and let it gently bubble for a couple of minutes with a stir here and there. Lower the heat and whisk in Parmesan little by little till smooth. If it’s too thick, stir in some of your pasta water to loosen it up. Adjust the seasoning with salt and pepper.
05 - Stir the cooked fettuccine into the creamy Alfredo sauce, making sure it’s nicely coated. Cut the fried chicken and arrange it over the pasta. Sprinkle some parsley and extra cheese on top if you’d like. Serve while it’s hot and fresh.
