Rinse the rice until the water runs clear. In a saucepan, combine rice, coconut milk, water, salt, and sugar. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Remove from heat and let rest, covered, for another 10 minutes. Fluff with a fork.

In a large skillet over high heat, heat the olive oil. Add the white parts of the scallions, garlic, and ginger. Cook for 1–2 minutes until fragrant.

Add the ground pork. Break it apart with a spoon and cook until no longer pink.

Stir in the brown sugar, lime juice, and sriracha. Spread the mixture evenly in the skillet and let it cook, undisturbed, for about 2 minutes so the bottom caramelizes. Stir and repeat once more to develop flavor.

Taste and adjust seasoning with salt, pepper, more sriracha, or lime juice.

Place the coconut rice in bowls, top with the ginger-lime pork, and garnish with the green parts of the scallions, peanuts, herbs, and lime wedges.
