Ginger Lime Pork Coconut Rice (Print-Friendly Version)

# Ingredients You’ll Need:

01 - 1 cup jasmine rice
02 - 1 cup coconut milk
03 - 1 cup water

05 - 1 teaspoon sugar (optional)

→ For the pork

06 - 1 tablespoon olive oil
07 - 3 scallions, thinly sliced (white and green parts separated)
08 - 4 cloves garlic, minced
09 - 1½ tablespoons fresh ginger, grated or minced
10 - 1½ pounds (about 680 g) ground pork
11 - ⅓ cup light brown sugar, packed
12 - 3 tablespoons lime juice (freshly squeezed)
13 - 1 tablespoon sriracha (adjust to taste)
14 - Salt and black pepper, to taste
15 - Optional toppings: chopped peanuts, fresh cilantro, mint, Thai basil, lime wedges

# How to Make It:

01 - Rinse the rice until the water runs clear. In a saucepan, combine rice, coconut milk, water, salt, and sugar. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Remove from heat and let rest, covered, for another 10 minutes. Fluff with a fork.
02 - In a large skillet over high heat, heat the olive oil. Add the white parts of the scallions, garlic, and ginger. Cook for 1–2 minutes until fragrant.
03 - Add the ground pork. Break it apart with a spoon and cook until no longer pink.
04 - Stir in the brown sugar, lime juice, and sriracha. Spread the mixture evenly in the skillet and let it cook, undisturbed, for about 2 minutes so the bottom caramelizes. Stir and repeat once more to develop flavor.
05 - Taste and adjust seasoning with salt, pepper, more sriracha, or lime juice.
06 - Place the coconut rice in bowls, top with the ginger-lime pork, and garnish with the green parts of the scallions, peanuts, herbs, and lime wedges.
