02 - 1 pound Yukon gold potatoes, sliced into ½-inch pieces
03 - ¼ teaspoon garlic powder

06 - 1 ¼ pounds sirloin steak, cut into 1-inch pieces
07 - 2 tablespoons unsalted butter
08 - 1 tablespoon minced garlic
09 - 1 teaspoon chopped fresh thyme
10 - 1 teaspoon chopped fresh rosemary
11 - 1 teaspoon chopped fresh oregano

# Steps to Follow:

01 - Heat a large cast iron skillet over medium-high heat and add olive oil. Add potatoes, garlic powder, and season with salt and black pepper. Cook for about 5 minutes, stir, then continue cooking for an additional 10-15 minutes, stirring occasionally, until potatoes are fork tender. Remove from skillet and set aside.
02 - Increase the skillet heat to high. Add the steak pieces and season with salt and black pepper. Let the steak sear for 1 minute, then stir and cook until golden brown, about 4-5 minutes.
03 - Add butter, minced garlic, thyme, rosemary, oregano, and the cooked potatoes back to the skillet. Cook for 2-3 minutes to meld the flavors. Serve immediately.
