Preheat your oven to 190°C (375°F).

Using a serrated knife, slice the top off the sourdough loaf to create a lid. Carefully hollow out the center, leaving about 2.5cm (1-inch) around the edges.

In a small bowl, combine the melted butter, minced garlic, chopped rosemary, thyme, salt, and pepper.

Place the hollowed-out loaf on a baking sheet. Brush the inside with the garlic herb butter mixture. Layer Brie cheese slices inside, then spread cranberry sauce on top. Continue alternating layers until the bread cavity is filled.

Replace the top of the loaf and brush the outside with remaining garlic herb butter. Wrap the bread in foil and bake for 20-25 minutes, until the Brie is melted and the bread is golden.

Remove the foil and allow to cool slightly. Garnish with fresh parsley if desired. Slice and serve while warm.
