01 - 1 frozen pie crust (deep dish preferred)
02 - 1 1/4 cups water
03 - 1 1/4 cups granulated sugar
04 - 3 tablespoons cornstarch
05 - 3 tablespoons dry strawberry gelatin (like Jello, approximately half a 3 oz box)
06 - 2 cups fresh strawberries, sliced in halves or quarters
07 - Whipped cream, for garnish (optional)

# Steps to Follow:

01 - Prick the bottom and sides of the frozen pie crust with a fork. Bake according to package instructions. If concerned about puffing, place parchment paper inside the crust and add 1 cup of dried beans or rice as weights. Let the crust cool completely before filling.
02 - In a small saucepan, whisk together water, sugar, and cornstarch. Heat over medium heat until boiling, then reduce heat and simmer for several minutes, stirring constantly, until the mixture thickens.
03 - Stir in the dry strawberry gelatin until fully dissolved. Remove from heat and set aside to cool, stirring occasionally.
04 - Place the sliced strawberries in the cooled pie crust. Pour the cooled strawberry gelatin mixture evenly over the strawberries.
05 - Refrigerate the assembled pie for at least 4 hours, or until set. Serve chilled, garnished with whipped cream if desired.
