Fresh Mango Herb Salad (Printable Version)

# What You’ll Need:

01 - 3 medium or 2 large ripe mangos, peeled and sliced into strips
02 - 1 red bell pepper, stemmed, seeded, and sliced into thin strips
03 - 0.25 medium red onion, very thinly sliced
04 - 1 jalapeño pepper, thinly sliced
05 - 2 cups mixed fresh basil and mint leaves
06 - 0.5 cup chopped, toasted peanuts

→ Dressing

07 - 2 tablespoons fresh lime juice
08 - 1 tablespoon avocado oil
09 - 1 tablespoon tamari
10 - 0.5 teaspoon honey or agave nectar
11 - 0.25 teaspoon grated fresh ginger
12 - 0.25 teaspoon sea salt

# Steps to Follow:

01 - In a large bowl, toss together the mango, red bell pepper, red onion, and jalapeño.
02 - In a small bowl, whisk together the lime juice, avocado oil, tamari, honey, grated ginger, and sea salt.
03 - Pour the dressing over the mango salad and toss. Add the fresh basil and mint leaves along with the chopped, toasted peanuts and toss again.
04 - Season to taste, garnish with reserved herbs and peanuts, and serve immediately.
