Heat olive oil in a skillet over medium heat. Add finely chopped onion and cook, stirring often, for 10 to 12 minutes until onions are deep golden and soft. Add minced garlic in the last minute, sautéing until fragrant. Remove skillet from heat and allow mixture to cool.

Preheat oven to 350°F (175°C). In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, egg, French onion soup mix, Worcestershire sauce, salt, and black pepper. Add cooled caramelized onions and garlic. Mix thoroughly by hand or spatula until all ingredients are evenly incorporated.

Transfer meat mixture into a loaf pan, pressing gently to form an even loaf. Place pan in preheated oven and bake for 50 to 60 minutes, or until internal temperature reaches 160°F (71°C).

While meatloaf bakes, whisk together ketchup, Dijon mustard, brown sugar, soy sauce, and Worcestershire sauce in a small bowl. After 40 minutes of baking, remove loaf from oven and spread glaze evenly over top. Return pan to oven and continue baking for an additional 10 to 15 minutes, until glaze is glossy and bubbling.

Let loaf rest in pan for 10 minutes before slicing. Serve warm with side dishes such as mashed potatoes or green beans as desired.
