Baked French Onion Gnocchi (Print-Friendly Version)

01 - 1 tablespoon olive oil
02 - 1 tablespoon unsalted butter
03 - 1 large sweet onion, thinly sliced
04 - 1/4 cup white wine
05 - 1 tablespoon fresh minced thyme
06 - 2 cups beef broth
07 - 1 lb gnocchi
08 - Salt and pepper to taste
09 - 1 cup shredded swiss or gruyere cheese
10 - 8-10 slices French bread, toasted

# How to Make It:

01 - Preheat oven to 400°F.
02 - In a large skillet or Dutch oven, melt olive oil and butter over medium heat. Add onions and stir occasionally until onions are a deep caramelized color, about 20 minutes.
03 - Deglaze the pan by adding white wine and scraping up any browned bits with a wooden spoon. Add thyme and beef broth and bring to a simmer.
04 - Add gnocchi and stir occasionally over medium heat until gnocchi is tender and sauce is thickened and reduced, about 5-10 minutes.
05 - Season gnocchi with salt and pepper to taste and scrape into a medium greased baking dish.
06 - Top with cheese and bake gnocchi at 400°F for 20-25 minutes until cheese is lightly browned and gnocchi is bubbly.
07 - Serve gnocchi with French bread slices for dipping. Enjoy!
