Preheat the oven to 375°F. Lightly grease a baking dish or line a baking sheet with parchment.

Arrange tortillas on a clean work surface. Distribute sliced roast beef evenly over each tortilla.

Sprinkle shredded provolone or mozzarella cheese over the layer of roast beef on each tortilla.

Tightly roll up each tortilla and place seam-side down in the prepared baking dish.

In a small bowl, combine melted butter and garlic powder.

Brush the top of each roll up with the prepared butter mixture. Bake for 18 to 22 minutes, until the tortillas are golden and the cheese has melted.

While baking, prepare au jus according to package directions by combining the gravy mix with 2 cups water and heating until hot.

Slice the roll ups and serve warm alongside the au jus for dipping. Garnish with chopped parsley if desired.
