Turn the oven on to 350°F and grease up a 9x13 pan with some nonstick spray.

In a large mixing bowl, toss together the raw rice, cooked chicken, condensed soup, tomatoes, fajita seasoning, sour cream, mixed veggies, chicken broth, and half the cheese. Mix everything thoroughly.

Pour the mixture evenly into your prepared baking dish. Cover snugly with foil.

Pop the pan into the oven and bake for 35–45 minutes, or until the rice is totally tender.

Take the dish out, scatter the leftover cheese on top, and bake uncovered for a few more minutes until it melts perfectly.
