Cheesy Fajita Dish (Printable Version)

01 - 2 large chicken breasts, boiled and shredded (around 4 cups)
02 - 2 cups of instant rice, uncooked
03 - 1 packet (1.12 oz) of fajita spice blend
04 - 8 oz bag of shredded Mexican cheese blend (roughly 2 cups)
05 - 1 cup frozen diced peppers and onions
06 - 1 (10.5 oz) can of condensed chicken soup
07 - 1 cup sour cream
08 - 1 (10 oz) can of tomatoes with chili, including liquid (e.g., Rotel)
09 - 1.5 cups of chicken broth

# Steps to Follow:

01 - Turn the oven on to 350°F and grease up a 9x13 pan with some nonstick spray.
02 - In a large mixing bowl, toss together the raw rice, cooked chicken, condensed soup, tomatoes, fajita seasoning, sour cream, mixed veggies, chicken broth, and half the cheese. Mix everything thoroughly.
03 - Pour the mixture evenly into your prepared baking dish. Cover snugly with foil.
04 - Pop the pan into the oven and bake for 35–45 minutes, or until the rice is totally tender.
05 - Take the dish out, scatter the leftover cheese on top, and bake uncovered for a few more minutes until it melts perfectly.
