Fairfax Breakfast Sandwich Eggslut (Print-Friendly Version)

Soft brioche, fluffy eggs, melted cheddar, caramelized onions, and sriracha mayo for a decadent breakfast bite.

# Ingredients You’ll Need:

01 - 3 tbsp unsalted butter, divided
02 - 1 tbsp cooking oil
03 - 1 medium yellow onion, sliced
04 - 1/4 cup water
05 - 3 large eggs
06 - 2 tbsp chives, thinly sliced
07 - 2 tbsp mayonnaise
08 - 1 tbsp Sriracha
09 - 1 brioche bun, sliced
10 - 1 slice cheddar cheese
11 - Salt to taste
12 - Pepper to taste

# How to Make It:

01 - In a skillet over medium heat, add cooking oil and sliced onions. Add a pinch of salt and 1 tbsp of butter, mixing into the onions and spreading them in a single layer. Reduce heat to low and cook, stirring frequently, until onions are soft and lightly golden. Add water to deglaze the pan and continue cooking until fully caramelized. Keep warm.
02 - In an unheated skillet, add the eggs and scramble them with a spatula until well blended. Add 1 tbsp of butter and place the skillet over medium-low heat, stirring continuously. Add a pinch of salt and chives, and cook until the eggs just start to set. Remove from heat and keep warm.
03 - In a small bowl, combine mayonnaise and Sriracha in a 2:1 ratio. Mix well.
04 - Toast the brioche bun with butter. Spread the Sriracha mayo on both sides of the bun. Layer the scrambled eggs on the bottom bun. Slightly melt the cheddar cheese in a nonstick pan and place it over the eggs. Top with 1–2 tablespoons of caramelized onions. Close the sandwich and enjoy!
