Add in drained Rotel, shredded cheddar cheese, and Bisquick baking mix. Stir vigorously until a thick, sticky dough forms.

Portion dough into 1-inch balls using hands or a small cookie scoop.

Place shaped balls onto a parchment-lined or non-stick sprayed baking sheet.
