Microwave the flour tortillas for 10 to 15 seconds until they are warm and pliable.

Arrange each tortilla on a flat surface. In the center, add nacho cheese sauce, cooked rice, seasoned beef, sour cream, crushed tortilla chips, and shredded cheddar cheese.

Fold in the sides and tightly roll up each tortilla to enclose the fillings.

Evenly coat the outside of each burrito with shredded mozzarella cheese, gently pressing so cheese adheres.

Heat butter in a large nonstick skillet over medium heat. Place burritos seam side down and cook for 2 to 3 minutes per side, or until golden brown and exterior cheese is melted and crisp.
