In a large pot of salted water, bring water to a boil. Salt generously. Cook the noodles according to the package instructions, or until al dente. Strain and reserve 1 cup of the pasta water.

In a skillet, heat a small amount of oil and saute the minced garlic until it turns brown and fragrant without burning. Remove some of the fried garlic and set aside for garnish.

Add red chili flakes to the skillet for extra flavor. This step is optional but highly recommended.

On medium heat, add butter and vegetarian oyster sauce to the skillet. Cook for 2 minutes, then cover the skillet with a lid.

Add the cooked noodles to the skillet with the garlic sauce. Pour in the reserved pasta water and mix well. Adjust the consistency by adding more pasta water if needed. The noodles should be coated in a light, saucy consistency.

Season the dish with salt and pepper to your taste. Stir in parmesan cheese, reserving some for garnish.

Top the noodles with the crispy fried garlic set aside earlier, green onions or chives, sesame seeds, and additional parmesan cheese. Serve immediately and enjoy.
