Easter Cookies with M&M's (Printable Version)

# What You’ll Need:

→ Dry Ingredients

01 - 1½ cups plus 1 tablespoon all-purpose flour, spooned and leveled
02 - 1 teaspoon baking powder
03 - ½ teaspoon baking soda
04 - ¼ teaspoon salt

→ Wet Ingredients

05 - ½ cup unsalted butter, softened but still cool
06 - ½ cup granulated sugar
07 - ⅓ cup brown sugar, lightly packed
08 - 1 large egg, cold, straight from the fridge
09 - 2 teaspoons pure vanilla extract

10 - ¾ cup Easter or spring M&M's, plus extra for topping (optional)
11 - ½ cup white chocolate chips or chunks, plus extra for topping (optional)
12 - ¼ cup pastel sprinkles

# Steps to Follow:

01 - Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
02 - In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
03 - In a separate bowl, using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter, granulated sugar, and brown sugar for 1-2 minutes until light and fluffy.
04 - Add the egg and vanilla extract to the creamed butter mixture, mixing until combined. Scrape the sides of the bowl as needed.
05 - On low speed, gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
06 - Gently stir in the M&M's and white chocolate chips until evenly distributed. Place the sprinkles in a shallow bowl for later.
07 - Scoop balls of cookie dough, each between 1½ and 2½ tablespoons in size. Gently press the tops of each ball into the shallow bowl of sprinkles. You can bake the cookies immediately or chill the dough in the fridge for about 20 minutes for slightly thicker cookies.
08 - Place dough balls onto the prepared baking sheets, leaving 1-2 inches of space for spreading. Bake for 8-11 minutes, until the edges are set and the centers are slightly underdone for a soft texture.
09 - While the cookies are still hot, use a round glass, bowl, or cookie cutter larger than the cookie to swirl around and shape the edges, or use the back of a spoon to gently push the edges inward for a clean, round look.
10 - Place the baking sheets on wire racks and allow the cookies to cool completely. If desired, press additional M&M's or white chocolate chips onto the tops of the warm cookies for aesthetic purposes.
