Put eggs in a pot and cover them with cold water. Bring to a gentle boil, then turn down heat and let them cook for 10 minutes until they're hard-boiled. Right away, move them to ice water for 5 minutes, then take off all the shells.

Grab a big pan and melt butter over medium heat. Throw in your sliced garlic and cook for about a minute until it smells good. Add your spinach and stir for 2-3 minutes until it shrinks down. Take it off the heat and let it cool down completely.

Cut your peeled eggs down the middle lengthwise. Carefully scoop out the yellow centers and put them in a mixing bowl. Line up all the white halves face-up on a serving dish.

Dump your cooked spinach and garlic into the bowl with egg yolks. Add mayo, mustard, lemon juice, paprika, hot sauce, and potato flakes. Stir everything until it's nice and smooth. Taste it and add more seasoning if you want.

Scoop or squeeze the yolky spinach mix into each egg white, making a tall heap that looks like a little tree.

Sprinkle bits of chopped red chili pepper on each tree like they're tiny ornaments. Top each one with a small star you've cut from yellow bell pepper.
