01 - 7 big eggs
02 - 2 tablespoons unsalted butter
03 - 2 garlic cloves, thinly cut
04 - 5 ounces baby spinach

05 - 1/3 cup mayonnaise
06 - 1 tablespoon mustard
07 - Juice from half a lemon
08 - 1/2 teaspoon smoked paprika
09 - 1/4 teaspoon hot sauce
10 - 2 tablespoons instant mashed potato flakes

11 - 1 red Fresno chili, finely chopped
12 - 1 yellow bell pepper, snipped into tiny stars

# How to Make It:

01 - Put eggs in a pot with cold water covering them. Bring to a gentle boil, then lower heat and cook for 10 minutes until hard-boiled. Cool them down right away in ice water for 5 minutes, then take off all the shells.
02 - Melt butter in a big pan over medium heat. Throw in sliced garlic and cook for 1 minute until it smells good. Add spinach and stir for 2-3 minutes until it shrinks down. Take it off the heat and let it cool down completely.
03 - Cut peeled eggs in half from top to bottom. Carefully scoop out the yellow centers and put them in a mixing bowl. Set the white parts face up on your serving dish.
04 - Mix the egg yolks with your cooked spinach and garlic, mayo, mustard, lemon juice, smoked paprika, hot sauce, and instant potato flakes. Stir until it's all smooth and creamy. Taste it and add more seasoning if you want.
05 - Scoop or squeeze the yolk mixture into each egg white half, making a tall pile that looks like a tiny tree.
06 - Sprinkle chopped red chili on each tree like little ornaments and top with a small star cut from yellow bell pepper.
