Mix the soft unsalted butter, white sugar, and vanilla extract in a big bowl or stand mixer. Beat until the mix gets light and fluffy, about 3 minutes on medium speed.

Drop in eggs one by one, mixing just enough to blend each egg before adding another.

In another bowl, stir together the plain flour, baking powder, and salt until they're well mixed.

Slowly add the dry mix into the butter mixture, stirring on low until you get a nice dough. Don't mix too much.

Put the dough on a lightly floured counter and roll it out to how thick you want, usually about 1/4 inch (6 mm).

Use cookie cutters to make shapes from the dough, then put them on a baking sheet about 2 inches (5 cm) apart.

Cook in an oven heated to 350°F (175°C) for 8-10 minutes until the edges turn slightly golden. Switch the trays around if needed for even baking.

Take the cookies out and let them sit on the tray for 5 minutes, then move them to a wire rack to cool all the way.
