Crisp cucumbers and tangy feta with fresh herbs in a bright lemon-olive oil dressing. Light, refreshing, and Mediterranean-inspired.

# Ingredients You’ll Need:

→ Vegetables

01 - 2 large cucumbers, thinly sliced
02 - 1 small red onion, thinly sliced

→ Dairy

03 - 1 cup feta cheese, crumbled

→ Herbs

04 - 1/4 cup fresh dill, chopped
05 - 1/4 cup fresh parsley, chopped

→ Dressing

06 - 1/4 cup extra virgin olive oil
07 - 2 tablespoons lemon juice
08 - Salt and pepper to taste

# How to Make It:

01 - Wash the cucumbers thoroughly and slice them thinly. You can use a mandoline for even slices. Peel and thinly slice the red onion.
02 - In a large mixing bowl, combine the sliced cucumbers and red onions. Add the chopped dill and parsley.
03 - In a small bowl, whisk together the extra virgin olive oil and lemon juice. Season with salt and pepper to taste.
04 - Pour the dressing over the cucumber mixture. Gently toss the salad to ensure all ingredients are evenly coated with the dressing.
05 - Sprinkle the crumbled feta cheese over the salad. Gently fold the cheese into the salad, being careful not to break the cheese too much.
06 - Transfer the salad to a serving bowl. Serve immediately or chill for a few minutes before serving for an even fresher taste.

# Extra Suggestions:

01 - For best flavor, allow the salad to marinate for 15-20 minutes before serving to let the flavors meld together.
