Sear chicken in olive oil over medium heat for about 7 minutes, turning occasionally.

Combine brown sugar, pineapple juice, gluten-free soy sauce, and crushed pineapple in a small bowl. Mix well.

Place half of the sauce mixture, then cooked chicken, and then the remaining sauce mixture ingredients in the slow cooker. Cook on low for 4-6 hours.
