Pat the beef chuck roast dry with paper towels. Rub the roast evenly with salt, black pepper, garlic powder, onion powder, and dried thyme.

Heat a skillet over high heat and sear the beef roast on all sides until browned, if desired, to enhance the depth of flavor.

Place the sliced onion in the bottom of the crock pot. Pour in beef broth, Worcestershire sauce, and soy sauce.

Place the seasoned beef roast atop the onions. Cover and cook on low for 8 hours until the beef is tender and shreds effortlessly.

Remove the roast from the crock pot and shred the meat using two forks, discarding large pieces of fat.

Slice the hoagie rolls and layer the shredded beef onto each roll. Place a slice of provolone cheese over the hot beef.

If desired, position assembled sandwiches under a broiler for 1-2 minutes until the cheese is melted and bubbling.

Spoon the cooking liquid from the crock pot into small bowls and serve as a dip alongside each sandwich.
