Place the peeled and cut potato sticks in a pot of water. Add a pinch of salt and bring to a boil. Cook for about 5-7 minutes until they are slightly tender but still firm. Drain and let them cool completely.

In three separate bowls, place the flour in one, beaten eggs in another, and combine the breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in the third.

Start by coating each potato stick in flour, shaking off any excess. Then dip it into the beaten eggs, followed by the breadcrumb mixture, pressing gently to adhere the breadcrumbs well. Repeat this process until all potato sticks are coated.

Once all sticks are coated, create a small slit along the side of each stick to insert about 1 tablespoon of shredded mozzarella into each. Make sure to seal the edges gently to avoid cheese leakage during frying.

In a deep skillet or frying pan, heat about 5 cm of vegetable oil over medium-high heat. Once the oil is hot (test by dropping in a breadcrumb, it should sizzle), carefully add a few potato cheese sticks at a time. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.

Remove the sticks from the oil and place them on a paper towel-lined plate to drain excess oil.

Sprinkle with chopped parsley if desired and serve warm with your favorite dipping sauce such as ketchup, ranch, or garlic aioli.
