Crispy Hot Honey Feta Chicken (Printable Version)

# What You’ll Need:

→ Hot Honey

01 - 110g Honey
02 - 1 1/2 tsp Hot Sauce (e.g., Frank's or Cholula)
03 - 3/4 tsp Chilli Flakes

→ Chicken

04 - 2x 250g Chicken Breasts
05 - 2 tsp Paprika
06 - 1 tsp Salt
07 - 1/2 tsp Onion Powder
08 - 1/2 tsp Garlic Powder
09 - 1/2 tsp Dried Oregano
10 - 1/2 tsp Black Pepper
11 - 1/4 tsp Cayenne Pepper
12 - 35g Plain Flour
13 - 2 Eggs, beaten
14 - 65g Panko Breadcrumbs
15 - Vegetable Oil, as needed (approximately 6-8 tbsp)

→ Topping

16 - 200g Feta Cheese, crumbled

# Steps to Follow:

01 - Combine honey, hot sauce, and chilli flakes in a bowl and warm in the microwave for about 20 seconds or on the stove until it simmers. Stir and leave to cool.
02 - Slice each chicken breast horizontally through the centre to create four even-sized pieces. Combine paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper in a small bowl.
03 - Set out three shallow dishes and a tray. Combine flour with half the seasoning in the first dish, place beaten eggs in the second, and combine Panko breadcrumbs with the remaining seasoning in the third. Coat each chicken piece in the flour, then egg, and finally breadcrumbs. Place on the tray.
04 - Heat vegetable oil in a large pan over medium-high heat. Once a breadcrumb sizzles rapidly in the oil, carefully fry chicken pieces in batches if necessary. Cook for 3-4 minutes on each side until golden and crispy, then place on a wire rack.
05 - Add crumbled feta on top of the chicken pieces and place under a high grill until the cheese is lightly golden and soft.
06 - Drizzle hot honey over the grilled chicken and serve immediately. Store leftover hot honey in the refrigerator.

# Additional Notes:

01 - Adjust the spiciness of the hot honey by adding more chilli flakes or hot sauce after it has cooled.
02 - To bake the chicken instead of frying: toast breadcrumbs in the oven, coat the chicken as directed, and bake at 220°C for 18-20 minutes.
03 - Suggested serving: pair with arugula and potato wedges.
