Set oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Pound each chicken breast until about ½ inch (1.3 cm) thick.

Place one slice of chicken ham and one slice of cheese on each chicken breast. Roll up tightly and secure with toothpicks.

In a small bowl, mix breadcrumbs, garlic powder, onion powder, melted butter, salt, and pepper.

Roll each chicken roll-up in the breadcrumb mixture.

Place the chicken rolls seam-side down in the prepared baking dish. Drizzle lightly with olive oil. Bake for 30–35 minutes, or until fully cooked and golden on top.

While the chicken bakes, melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute. Slowly whisk in milk and bring to a low boil until thickened. Add Parmesan, Dijon mustard (if using), and season with salt and pepper.

Pour warm cream sauce over the baked chicken and serve with mashed potatoes or rice.
