Start by mixing butter or extra coconut butter with cream cheese or coconut butter in a bowl until it’s nice and smooth.

Next, add powdered sugar or erythritol and the instant coffee. Mix everything well so it’s all combined.

If you’re using chocolate, gently fold the chips or chopped pieces in so they spread throughout the mix.

Put the bowl in the fridge for about 20 minutes to let it set a bit. Then use your hands or a scoop to form small truffles.

Set the truffles on a tray lined with parchment and cool them down in the fridge for another 5 minutes before eating.
