01 - 1 tablespoon olive oil
02 - 1 small onion, chopped
03 - 2 cloves garlic, minced
04 - 1 tablespoon grated ginger
05 - 2 tablespoons red curry paste
06 - 1 teaspoon turmeric
07 - 1/2 teaspoon salt
08 - 1 can (13.5 oz) coconut milk
09 - 2 cups vegetable broth
10 - 1 large carrot, sliced
11 - 1/2 cup green beans, chopped
12 - Juice of 1 lime
13 - 1/4 cup chopped cilantro

→ Dumplings

14 - 1 cup flour
15 - 2 teaspoons baking powder
16 - 1/2 teaspoon salt
17 - 1/2 cup coconut milk
18 - 1 tablespoon melted coconut oil

# Steps to Follow:

01 - In a pot, heat olive oil. Add onion, garlic, and ginger and sauté until fragrant.
02 - Stir in curry paste, turmeric, and salt. Cook for 2 minutes.
03 - Add coconut milk, vegetable broth, carrot slices, and green beans. Simmer for 10 minutes.
04 - Combine flour, baking powder, and salt in a bowl. Stir in coconut milk and melted coconut oil to form a dough.
05 - Drop small spoonfuls of dumpling dough into the soup. Cover and simmer for 15 minutes until the dumplings are fluffy.
06 - Stir in lime juice and cilantro. Serve hot.
