In a bowl, beat together cream cheese, powdered sugar, and vanilla extract. Shape into 12 small balls and freeze for 20–30 minutes.

Cream the softened butter and brown sugar together. Add the egg and vanilla extract, mixing until combined. Stir in the all-purpose flour, baking soda, and salt. Chill the dough for 20 minutes to make it easier to handle.

In a small bowl, mix together brown sugar, ground cinnamon, and melted butter.

Take a scoop of cookie dough and flatten it in your hand. Place a frozen cheesecake ball in the center and fold the dough around it, sealing it completely. Flatten the dough slightly, add a small amount of cinnamon topping to each cookie, and swirl with a toothpick to create a cinnamon roll-like design.

Place the assembled cookies on a baking sheet and bake at 180°C (350°F) for 10–12 minutes, or until the edges turn golden. Let the cookies cool on the tray before transferring them to a wire rack.
