Cinnamon Roll Cheesecake Cookies (Printable Version)

# What You’ll Need:

→ Cookie Dough

01 - 115g unsalted butter, softened
02 - 150g brown sugar
03 - 1 egg
04 - 1 tsp vanilla extract
05 - 180g all-purpose flour
06 - 1/2 tsp baking soda
07 - 1/2 tsp salt

→ Cheesecake Filling

08 - 120g cream cheese (such as Philadelphia)
09 - 2 tbsp powdered sugar
10 - 1/2 tsp vanilla extract

→ Cinnamon Swirl Topping

11 - 2 tbsp butter, melted
12 - 50g brown sugar
13 - 1 tbsp ground cinnamon

# Steps to Follow:

01 - In a bowl, beat together cream cheese, powdered sugar, and vanilla extract. Shape into 12 small balls and freeze for 20–30 minutes.
02 - Cream the softened butter and brown sugar together. Add the egg and vanilla extract, mixing until combined. Stir in the all-purpose flour, baking soda, and salt. Chill the dough for 20 minutes to make it easier to handle.
03 - In a small bowl, mix together brown sugar, ground cinnamon, and melted butter.
04 - Take a scoop of cookie dough and flatten it in your hand. Place a frozen cheesecake ball in the center and fold the dough around it, sealing it completely. Flatten the dough slightly, add a small amount of cinnamon topping to each cookie, and swirl with a toothpick to create a cinnamon roll-like design.
05 - Place the assembled cookies on a baking sheet and bake at 180°C (350°F) for 10–12 minutes, or until the edges turn golden. Let the cookies cool on the tray before transferring them to a wire rack.

# Additional Notes:

01 - Chilling the cookie dough helps prevent spreading during baking, ensuring thicker cookies.
