18 - 2 cups cooked Jasmine rice

19 - Fresh cilantro, chopped
20 - 1 lime, sliced

# Steps to Follow:

01 - Thoroughly wash peaches without peeling. In a large mixing bowl, combine diced peaches, bell pepper, red onion, green onions, and cilantro. Add lime juice, chili powder, and salt. Toss well to combine and adjust seasoning to taste.
02 - Generously season sliced chicken breasts with salt, pepper, smoked paprika, and chili powder, ensuring even coverage.
03 - Heat olive oil in a large skillet over medium-high heat. When oil is hot, add seasoned chicken. Cook undisturbed for 4 minutes to develop a good sear. Flip and cook for 2 additional minutes.
04 - Reduce heat to low. Add lime juice and honey to the skillet. Continue cooking for 2 minutes, stirring frequently until chicken is completely cooked through.
05 - Remove skillet from heat. Add butter and stir to coat chicken pieces. Mix in chopped cilantro.
06 - Portion cooked jasmine rice into serving bowls. Top with the peach salsa and cilantro-lime honey chicken. Garnish with additional chopped cilantro and fresh lime slices.
