Heat your oven to 350°F (325°F if using dark or nonstick pans). Mix the strawberry cake mix, oil, vanilla, and eggs in a big bowl. Keep stirring with a spoon until you get a smooth, even dough.

Wrap the bowl and pop the dough in the fridge for about 15 to 30 minutes to make it firmer.

With washed hands, roll the cold dough into small balls about 1-inch around.

Set these dough balls on clean baking sheets, leaving about 2 inches of space between them.

Put the sheets in your hot oven and bake for 9 to 12 minutes. They're done when the tops look set and the bottoms start getting a bit golden.

Take them out and let the cookies sit on the baking sheets for a minute. Then move them to wire racks and wait about 30 minutes for them to cool completely.

After they've cooled down, you can either pour melted chocolate over one side or dip part of each cookie into the chocolate. Toss on some sprinkles right away if you're using them.
