01 -
Preheat oven to 350°F. Line a large cookie sheet with a silicone baking mat.
02 -
In the bowl of a stand mixer, beat unsalted butter with granulated sugar on medium speed until thoroughly combined and fluffy.
03 -
Add egg yolks along with the vanilla or almond extract and continue to beat until evenly blended.
04 -
Reduce mixer speed and gradually add all-purpose flour and salt. Mix until just incorporated, forming a soft dough.
05 -
Pour in milk and mix until the dough holds together and achieves a smooth, pliable texture.
06 -
Divide dough and shape cookies as desired. Place on prepared baking sheet. Bake one tray at a time for 9 to 11 minutes, or until edges are just golden.
07 -
Remove from oven and allow cookies to cool on the baking sheet for 5 to 10 minutes. Transfer to a wire rack to cool completely.
08 -
Melt chocolate wafers in a heatproof bowl. Dip cooled cookies halfway into melted chocolate, letting excess drip off. Place on a lined baking sheet and add sprinkles if desired. Allow chocolate to set.
