Chicken Cheesesteak Skillet (Printable Version)

# What You’ll Need:

01 - 2 tablespoons olive oil, divided
02 - 1 yellow onion, halved and thinly sliced
03 - 1 red bell pepper, thinly sliced
04 - 1 green bell pepper, thinly sliced
05 - 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
06 - 1 1/2 teaspoons Italian seasoning
07 - 1/2 teaspoon smoked paprika
08 - Kosher salt and fresh ground black pepper to taste
09 - 1 cup shredded provolone cheese

# Steps to Follow:

01 - Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced peppers, onion, kosher salt, and fresh ground black pepper. Cook until vegetables are tender, then transfer them to a plate.
02 - Add the remaining tablespoon of olive oil to the skillet. Place the sliced chicken in the pan along with Italian seasoning, smoked paprika, kosher salt, and black pepper. Spread chicken in a single layer and let it sear without moving for a couple of minutes until browned.
03 - Continue sautéing the chicken until fully cooked through.
04 - Add the sautéed vegetables and any juices back to the skillet. Stir to combine, then top with shredded provolone cheese. Cover the skillet with a lid and heat until the cheese has melted. Serve immediately.
