Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or coat with baking spray.

In a large bowl using a stand mixer or hand mixer, beat the softened butter and granulated sugar together until pale and fluffy, about 1 minute.

Add the egg, vanilla extract, and almond extract (if using) to the mixture; beat until thoroughly combined.

Add all-purpose flour, baking soda, baking powder, and salt. Mix on low speed until just combined. Scrape down sides of bowl as needed.

Roll dough into 1-inch balls using your hands, then coat each ball by rolling it in the 1/4 cup granulated sugar.

Place dough balls onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10 to 11 minutes, or until cookies are lightly set around the edges.

Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. Optionally, frost or glaze as desired.
